LITHUANIAN TRADITIONAL COLD RED BEET SOUP



COLD RED BEET SOUP
"Saltibarsciai"

This is a very popular Lithuanian dish. It is connected with summer season, because its ingredients are fresh summer vegetables: cucumbers, potatoes, beets, dill, also boiled eggs, sour milk and fresh milk.

This is a real summer freshness, it refreshes every person in hot summer day. We think, that there is no person, who doesn't like this tasty soup.

RECIPE:

INGREDIENTS:

2 cooked red beets, peeled and grated
2 fresh cucumbers, cut into small cubes
2 hard boiled eggs
100 g (6 tablespoons) sour cream
1 l (4 cups) sour milk/clabber
1 cup boiled water
8 sprigs fresh dill
1 cup cut spring onions
sour cream, salt to taste

INSTRUCTION:

Crush egg yolks with spring onions and salt. Add cucumber, chopped egg whites, sour cream, sour milk, grated beets and 1 cup of boiled but chilled water. Mix well.
Serve in individual bowls sprinkled with dill. Eat with hot potatoes.

  2. I have tasted something like that in Poland and it is wonderful. Good to remind me . I will do that soon as weather is more like summer here

    It's bit to bitter for me, but that's very odd I never ever seen pink soup before.
